Dandelion & Burdock
Set in the heart of the Pennines, overlooking the dramatic scene where the rivers Ryburn & Calder converge, Dandelion & Burdock offers a comfortable, stylish dining experience. This new vegan restaurant has the unique distinction of offering a beautiful setting, cool & classy décor, menus which tantalise even the most veggie-resistant palate and puddings that dreams are made of.
The ethos of the restaurant is that vegan dining should be tasty, healthy and fun. The aim is to create a welcoming and laid-back service whilst attending to the whim and folly of the more particular clientele.
Cheshire-born chef/owner David Wilson opened the restaurant in Sept 2005. He has a long career as a chef; training after he left school then working in Manchester until he moved to the US where he lived for 15 years. The contrast between American and English styles of dining became very obvious as he worked in various restaurants in California and travelled across the south pursuing with passion new flavours and dishes. He became a convert to providing excellent service, an eclectic menu and more inspired yet wholesome dishes. He eventually moved to Oregon where he discovered further nuances in stateside culinary combinations.
When his son, Leif, was born, it became clear that the child was suffering from a number of food intolerances and that a regular diet was not appropriate. David rediscovered a book given by a friend outlining macrobiotic practices and the family shifted their dietary habits. A strong emphasis on healthy, seasonal food is evident in the monthly-changing menu and remains central to his cooking.
When returning to the UK, David worked for a period for a whole-food wholesaler where he became familiar with what products were on offer to vegans in this country. He now uses these with skill and panache to create unique and appetising dishes.
Whilst D&B diners are increasingly becoming the ear-to-the-ground veggie crowd, the continued presence of avowed meat-eater regulars testifies to the appeal and ingenuity of David’s cooking. Dandelion & Burdock is a place where everyone can dine in style.
